Asparagus, Avocado and Tofu Toast Served with Cucumber, Tomato, Chickpea, Onion and Olive Salad
Try this wonderfully light yet filling dish for a brilliant brunch or lunch. Delicious protein-packed tofu has a subtle Mediterranean spinach and basil flavour seasoned with black pepper, garlic, rosemary and thyme.
Prep time 5 mins Serves 2
4 medium slices seeded sourdough bread 100g asparagus, trimmed 1 pack Squeaky Bean Tofu Slices with Spinach & Basil 1 avocado, sliced a few small basil leaves (optional)
Method: Heat a griddle pan over medium-high heat until very hot, then griddle the bread on both sides. Griddle the asparagus, 1-2 mins on each side. Lay the Tofu Slices over the toast and arrange over the asparagus and sliced avocado. Garnish with the fresh basil (if using).
On the side: Cucumber, Tomato, Chickpea, Onion and Olive Salad
1/2 cucumber, quartered and diced 2 medium tomatoes, cut into chunks 1/2 tin chickpeas, drained and rinsed 1 tsp olive oil 1 tsp lemon juice, plus 1 tsp lemon zest 1/2 small red onion, very finely sliced 10 black olives (optional) salt and black pepper, to taste
Method:
Place the diced cucumber and tomatoes in a sieve and sprinkle with salt to draw out the moisture (a lot of this salt will drain away with the liquid); set aside for 10 mins. Toss the chickpeas in the olive oil, lemon juice and lemon zest, season to taste with salt and pepper. Mix together the cucumber, tomatoes, chickpeas, red onion and olives.
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Not suitable for freezing.
These Squeaky Bean Tofu Slices are high in protein (25g of protein per 100g) and a source of fibre (5.6g of fibre per 100g), and also make a perfect post-gym snack.
