Harissa Tofu & Tomato Sandwiches by Calum Harris, author of Proper Healthy, 80 Plant Based Recipes with a Boost, Carnival December 2024
Rose Harissa Red Pepper and Tomato Tofu Sandwiches: Protein packed and satisfying, this sandwich stands out as a powerhouse of flavour, texture, and nutrition. Ingredients: Pack of Squeaky Bean Tofu Slices with Red Pepper & Tomato (80g), 3 tbsp plant-based yoghurt, 2 tsp rose harissa paste, Juice of 1 lemon, 6 cherry tomatoes, 1/4 cucumber, Little gem lettuce, 10g fresh mint, to serve, 2 small flatbreads.
Instructions:
1. In a small bowl, mix the plant-based yoghurt, rose harissa paste and half the lemon juice. Season it to taste and that’s your sauce.
2. Slice your cucumber into thin slices, then slice the cherry tomatoes in half. Pop those both into another small bowl with salt, pepper and the other half of lemon juice. Strip the mint from the stalks and chop up the mint leaves. Stir half into the tomatoes and cucumbers.
3. Toast up your flatbreads in an oven for three English minutes, then spread the harissa yoghurt on the bottom. Take the Squeaky Bean slices and pop a few on top, making it look sort of like a doner kebab, then spoon on the harissa, the tomatoes and cucumber on top. Finish with the rest of the mint leaves and serve.
