Kick of Tikka Soft Summer Tacos

Makes 4 Tasty Tacos

Ingredients:

1 x Red Onion

1 x Green Pepper

1 x Red Pepper

½ Cucumber

1 x Small tin of Sweetcorn (approx. 200g)

1 Lime (zest and juice)

1 Pack Flat White Tortillas

1 Tsp Vegetable Oil

2 x Squeaky Bean Kick of Tikka Marinated Chicken Style Pieces

Handful Fresh Coriander

Vegan Plain Yoghurt (as much as you like, it’s for dolloping!)

Method:

Finely dice the red onion, peppers and cucumber. Place in a bowl with the sweetcorn, zest and juice of half a lime. Stir and leave to the side to make a fresh zesty salsa (tomatoes, avocado or even pineapple would also work!).

Either on the flat top of a BBQ or in a frying pan quickly fry the Squeaky pieces on a high heat to brown the edges and heat through.

Very lightly brush the tortillas on one side and pop them on a hot BBQ so the edges get a little crispy but they’re still pliable.

Remove from the heat, gently shape into a taco by folding roughly in half, stacking them next to each other on a plate and filling with the Squeaky tikka mixture and the fresh onion and pepper salsa right away so they maintain their shape.

Serve with cool dollops of plant-based plain yogurt and finish with a sprinkle of fresh coriander and the remaining lime juice and zest.

Ingredients:

Half Red Onion Juice of 1/2 Lemon 1-2 tbsp of Extra Virgin Olive Oil 1 tsp Nigella Seeds 1/2 Carrot Shredded 1/2 Tin Chickpeas Half Bag Rocket Handful of Cherry Tomatoes Half Pack Squeaky Bean Chicken Style Tikka Pieces

Method:

Finely dice the red onion, pour over the lemon juice, olive oil and nigella seeds. Add the shredded carrot to the onion and stir thoroughly. Drain the chickpeas (save the aquafaba liquid to make meringues later!) and stir into the mixture. Slice the cherry tomatoes in half and add to the salad with the rocket. Top with the Squeaky Bean Tikka Pieces and enjoy!

Ready-made plain pizza base Four tablespoons of BBQ sauce (either shop bought or homemade) Pack of Squeaky Bean Sweet Smoky BBQ Chicken Style Pieces (available from supermarkets) Half a red onion Half a red pepper Small tin of sweetcorn A generous handful of vegan cheese

Method: Preheat the oven to 180c/Gas mark 4 Thinly slice the red onion and red pepper, and drain and rinse the tin of sweetcorn Grate the vegan cheese Take your ready-made plain pizza base and spread with four tablespoons of BBQ sauce: or more if you prefer an extra saucy pizza Sprinkle over the vegan cheese. Don’t be shy – all good takeaway pizzas come loaded with extra cheese! Top with the Squeaky Bean BBQ Chicken Style Pieces, onion, pepper and sweetcorn Place in the oven and wait for the cheese to bubble and the base to brown (usually takes 10 to 15 minutes) Remove from the oven, generously slice, then devour the pizza Extra dipping sauce is optional but we love garlic aioli or vegan mayo

Ingredients: ½ Carrot Finely Shredded 100g Red Cabbage Finely Shredded 1 Tbsp White Wine Vinegar 1 x Ciabatta Roll Tsp Olive Oil Tbsp Vegetable Oil Teaspoon of Mixed Seeds (sesame is perfect!) ½ Pack Squeaky Bean Thai Marinated Chicken Style Pieces Sweet Chilli Sauce Handful of Rocket 1-2 Slices of Vegan Cheese

Method: 1. Add your finely shredded carrot and red cabbage to a bowl with the tablespoon of white wine vinegar, stir thoroughly and set to the side. 2. Cut the ciabatta roll in half and place the top cut-side down onto a hot griddle pan to bar mark the bread. Once marked, brush the top with a little olive oil, sprinkle with your choice of seeds for crunch (we’ve used sesame and nigella seeds). Then place in the oven and cook as per the on pack instructions ‘til warm and toasty. 3. Meanwhile, in a frying pan, heat the vegetable oil, add the Squeaky Pieces and flash fry until a little crisp and brown on the edges. 4. When the roll is a warm and a little crispy, remove from the oven and start to layer your burger! Start with the ciabatta roll base followed by a spoonful of sweet chilli sauce, the rocket, Squeaky Thai pieces and the shredded carrot & red cabbage mixture. 5. Quickly soften your slice of vegan cheese in a frying pan and transfer to your burger, it will melt a little more from the heat of ciabatta roll as you add the top. 6. Serve with sweet potato fries and enjoy!

Smashed Avocado Toasts Serves 2

4 slices sourdough bread, toasted 10g rocket 1 large avocado, peeled and stoned juice of ½ lime seasoning 1 x 160g pack Squeaky Bean BBQ 1 tbsp sriracha hot chilli sauce 1 tbsp sunflower seeds, toasted 1 tbsp pumpkin seeds, toasted

• Divide the rocket leaves between the slices of toasted sourdough. • Mash the avocado with the lime-juice and seasoning and then spoon onto the rocket. • Divide the Squeaky Bean pieces between the four toasts. Drizzle over the hot chilli sauce and sprinkle with toasted nuts.
