Foraging and Roasting Chestnuts: A Woodland Christmas Tradition

Expert Tips from Woodlands.co.uk’s Richard Scholfield

Foraging and roasting sweet chestnuts is a classic winter tradition in the UK, and one that can bring a taste of the outdoors straight to the Christmas table. Richard Scholfield, woodland expert at Woodlands.co.uk, encourages families to enjoy this seasonal treat responsibly, combining the joys of the forest with a simple, festive snack.

Richard explains that roasting chestnuts is one of the most rewarding seasonal activities. “Walking through the woods and collecting glossy brown nuts, then roasting them at home, is a way to connect with nature and the rhythm of the season,” he says. “It’s important to forage responsibly only gather sweet chestnuts from areas where you have permission, and leave plenty for wildlife like squirrels, deer, and birds.”

Sweet chestnuts (Castanea sativa) are the edible variety and should not be confused with horse chestnuts, which are toxic. Look for firm, shiny nuts that have fallen naturally, avoiding anything green, shrivelled, or mouldy. They are commonly found in woodlands, parks, and large estates across southern and central England, and harvesting them offers both a connection to the natural world and a simple, seasonal treat.

To roast chestnuts, preheat the oven to 200°C (400°F) or Gas Mark 6, and score each nut with a small X on the flat side to prevent splitting. Place them on a baking tray and roast for 20 to 25 minutes, shaking the tray occasionally. Once roasted, wrap them in a clean tea towel for five to ten minutes to make peeling easier. Enjoy them warm, straight from the shell, or incorporate them into festive recipes such as stuffing, soups, or desserts.

Richard adds, “Foraging chestnuts is as much about the experience as the food itself. It’s a chance to get outdoors, notice the seasonal changes in the woodland, and bring a taste of nature to your Christmas table.” By harvesting only what you need, respecting wildlife, and following basic safety and identification rules, families can enjoy this festive tradition while supporting healthy and sustainable woodlands.
