SCHLOSS Roxburghe launches new guest chef series, starting with Michelin-starred Tom Aikens in September

Historic manor house hotel SCHLOSS Roxburghe in the Scottish Borders is delighted to announce the debut of its new Guest Chef Series, beginning with Michelin-starred chef Tom Aikens on the 27th September.

Tom Aikens is one of the UK’s most celebrated chefs, distinguished by his milestone as the youngest British chef to be awarded two Michelin stars. His culinary journey includes Muse, La Tante Claire, Pied-à-Terre, and Joel Robuchon in Paris - all underscoring his dedication to elegant, seasonal cooking using exceptional, sustainable ingredients, and making him the perfect chef to begin SCHLOSS Roxburghe’s Guest Chef Series. 

The perfect culinary getaway for Autumn

On Saturday, 27 September 2025, guests are invited to enjoy an extraordinary evening as Tom Aikens pairs with SCHLOSS Roxburghe’s new Executive Head Chef Dan Ashmore to create a bespoke gastronomic experience. The six-course tasting menu will showcase both chefs’ creativity, blending seasonal Scottish produce with world-class culinary craftsmanship.

As places are limited, attendance is offered exclusively via an overnight Stay & Dine package, combining a full tasting menu experience with an overnight stay in one of SCHLOSS Roxburghe’s lavishly-appointed Estate King Rooms.

Each package includes:

  • A pre-dinner Champagne reception in the elegant drawing room
  • A six-course tasting menu with drinks pairings, co-created by Aikens and Ashmore
  • Overnight accommodation in an Estate King Room, offering picture-perfect views of the championship golf course or gardens
  • A full Scottish breakfast the following morning
  • Access to the hotel’s award-winning spa, including its heated outdoor infinity pool

Priced at £750 per couple, this exclusive offering is limited in availability - early booking is highly recommended.

A Michelin-starred menu to remember

This one-night-only menu is a celebration of seasonal Scottish ingredients, interpreted through the distinct styles of both chefs. 

The meal will begin with Snacks, including a Charcoal Croustade with Cods Roe, Chive, Soy-cured Trout Roe and a Venison Tartare with Pickled Walnut and Garden Herbs by Dan Ashmore, and Blood Pudding Tart with Mead Jelly and Blackberry Ketchup and a Celeriac Custard with White Crab Meat by Tom Aikens. 

Tasting menu dishes from Dan Ashmore include a Wagyu Fat Parker House Brioche with Estate Honey, Cold Pressed Rapeseed Oil and Miso Butter; an Orkney Scallop with Smoked Corn, Cep and Caviar; and Roasted Turbot with Garden Celeriac, Hazelnut and Red Wine. 

Dishes from Tom Aikens include Ricotta, Leek and Truffle; Mussels with Beef Fat and Elderberry; and Steamed Quail with Girolles and Madeira Sauce. 

The meal will be rounded out with Dan Ashmore’s signature dessert for SCHLOSS Roxburghe, Tea and Toast, as well as expertly crafted Petit Fours.
