Hotel Granbaita Dolomites returns for 2025 with new Head Chef Announced

Hotel Granbaita Dolomites, a five-star wellness hotel in the heart of the UNESCO World Heritage Site, has announced the appointment of a new chef duo.

Located in Selva Val Gardena, Granbaita Dolomites emerges as one of South Tyrol’s most stylish alpine bases, re-opening with a revamped exterior and renovated garden rooms following a series of renovations last year. Owned and operated by the Puntscher–Perathoner family for over 60 years, this summer also marks the introduction of an exciting new culinary direction led by South Tyrolean native Marc Bernardi and his wife, Sofia.

Marc, who trained with Michelin-starred chefs including Norbert Niederkofler and Claudia Melis, brings a deeply personal culinary philosophy that fuses his roots in South Tyrol and Mantua with modern, international techniques. Marc spent some time in Mantua with his mother, a northern Italian region of Lombardy. He is joined by Sofia, a Mantuan ‘Rasdora’, who handcrafts pasta and ravioli.

Together, they oversee a two-fold dining offering: the traditional mountain and tradition menu and the globally inspired Granbaita Tasting menu. Both are grounded in circular cuisine - seasonal, local ingredients, with 90% of vegetables sourced from South Tyrolean famers and lake fish featured prominently across dishes. Fresh pasta is made in-house daily, and a Josper charcoal oven brings a bold, elemental dimension to the meat preparations. Guests can look forward to immersive dining experiences that honour Alpine tradition while pushing creative boundaries. 

Wellness remains a central pillar of the Granbaita experience. The 2,000 sqm Savinela Spa is inspired by the natural beauty of the Dolomites, offering saunas, saline flotation tubs, pools, a fitness studio, and six curated treatment rituals using ingredients from the surrounding Alpine landscape. Even offering the traditional Hay Bath, every aspect of the hotel experience pays homage to local tradition. 

Autumn in Selva Val Gardena offers unlimited adventure with complimentary daily guided hikes and e-bike tours with climbing courses, yoga and Pilates also available. 

Making it easier than ever to travel to The Dolomites, SkyAlps has just announced their winter 25/26 schedule with 3 flights a week from London Gatwick to Bolzano on Wednesday’s, Saturday’s and Sunday’s.

The five-star Hotel Granbaita Dolomites is located in the heart of Selva di Val Gardena, in the Dolomites UNESCO World Heritage Site. Owned by the Puntscher - Perathoner family for over 60 years, the alpine retreat opened its doors in 1961 and was radically reconstructed by the third generation in 2019. After the final phase of renovation was completed in summer 2024, the hotel unveiled a refreshed and refined exterior with the addition of revamped garden rooms, completing the design story.
