Why Wood-fired Pizza Ovens Should Rule Commercial Kitchen Refurbishment Plans

Thinking of carrying out a commercial kitchen refurbishment this winter?  If so, perhaps pizza is a menu choice for which you wish to cater?  After all, who doesn’t want those high profit margins. And, what’s not to like about a dish that’s ever-popular and which will minimise food waste?  But why should you really make it a commercial wood-fired pizza oven, rather than an electric version?  What will diners absolutely prefer about wood-fired pizza?

The greater appeal of wood-fired pizza

The answer lies in the means of cooking wood-fired pizza. It is done at a temperature way above that of an electric oven, which delivers key benefits.  These can be summed up in two words – taste and texture.  Both of those matter to your customers.

The taste is undeniably enhanced when you serve wood-fired pizza.  The high heat in the wood-fired oven, of around 450°C as opposed to 230-260°C in an electric oven, locks in the moisture within the pizza toppings.  Simultaneously, this holds nutrients within the toppings, ensuring that vegetables, such as tomatoes, peppers and mushrooms, do not lose their anti-oxidants and nutritional value.  When the cooking process is a long drawn-out one in an electric oven, this is far from the case.  Toppings can taste bland but also have relinquished all of their dietary value.

The wood-fired pizza cooking process

In a wood-fired oven like a Valoriani, you are exposing the ingredients to intense heat but only for a matter of around 90 seconds.  That creates a true sweet spot within the cooking process.

A greater complexity of flavour is also achieved through a faster caramelisation process when you cook the wood-fired way.  This is important, as it not only acts on the toppings but also activates sugars within the dough.  This helps deliver a little welcome sweetness, when the final wood-fired pizza is on the plate.

Furthermore, flavour is also imparted by the wood itself.  As it burns, aromas are unlocked and compounds infuse the pizza from its crust to its top.  There is even the opportunity to play around with this, by choosing different woods and experimenting with their flavour infusions.  That could be anything from cherry to hickory.

How a wood-fired oven’s heat enhances pizza

The high heat of a wood-fired oven is also a huge asset for the cooking of the pizza dough.  It is hard to achieve the perfect blistered and slightly charred pizza base when you are cooking pizza in an electric oven. These factors all add to the authenticity of the pizza being enjoyed and enhance customer satisfaction.  The trick of the wood-fired oven is to deliver that charring and blistering but also keep the crust crisp yet chewy.  Crispness and doughy and fluffy softness are the essential yin and yang that every authentically cooked pizza requires.  Little brown specks on perfectly melted cheese signify that all was cooked in a time-honoured Italian way.

The sensory experience created by a woodfired oven

There is also a more sensory all-round experience with a wood-fired oven.  It creates fantastic visuals in your eatery, delivered by mesmerising flames and the action of the pizzaiolo.  The oven emits gloriously evocative aromas that transport diners back to their most-treasured Mediterranean holiday.  There is the sound of pizza shovels to alert diners to the fact a pizza is on its way.  If you have a Neapolitan-style pizza, the diner can use their sense of touch to appreciate the crust and texture.  Finally, there is the glorious taste with all those smoky wood-created flavours.

At a practical level, a wood-fired oven keeps your diners waiting for their food for less time and speeds up your table turnaround times.

How to buy the right commercial wood-fired pizza oven

However, as with everything there is a but.  Unfortunately, the perfect wood-fired pizza is only achievable if you have the perfect wood-fired oven.  If you have an oven with poor heat retention, cold spots on the oven floor and a construction that is inadequate due to the materials used, you have failed to achieve the advantage that a wood-fired oven should bring to your commercial kitchen.  It will mean food waste as some pizzas have to be scrapped for not being optimally cooked.  It can result in enhanced labour costs, as staff have to pay attention and turn and move pizzas more, just to get them to cook.  It can easily result in poor reviews and dissatisfied customers.

So the message is ‘buyer beware’, because there are very many unfit-for-purpose pizza ovens in the UK market.  Some are manufactured in the UK; others in Europe.

One oven never criticised, by anyone who has ever tried it, is the best-in-class Valoriani oven.  It is known for being the oven to covet, because it is perfect in its dimensions. It is, similarly, outstanding in its construction. It is built using the finest refractory clay available.  Its design has often been aped but its performance has never been surpassed. It is the brainchild of truly dedicated refractory clay professionals and artisans.

When you have a Valoriani oven at your disposal, you can leverage all the benefits of wood-fired pizza described.  There is no fear of the oven letting you down.  On that basis, you will not disappoint your customers either.  With superb insulation, all the heat you generate from the fire will stay within the oven.  This cooks pizza by those three vital means – conduction, to heat the base; convection, to ensure even cooking and radiant heat, to cook the toppings to perfection.  And we all know how electric ovens struggle to do the latter.
