Easter is just around the corner and that means a big focus on the traditional meat treat of lamb. But how can you cook lamb in your wood-fired oven, to conjure up the tastes of Italy and the Mediterranean in your own back garden?

So let’s take a look at how you could be cooking lamb in your wood-fired oven this Easter.
Roast Lamb
Conjuring up a roast lamb worthy of any family feast held in Lazio in Italy, where this is a Sunday speciality, is simple in a wood-fired oven. You just need to maintain a moderate temperature, manage the fire and pop your meat into the oven with foil over the top. You can give it a few twists, by adding potatoes underneath, which will soak up the lamb juices and deliver a tremendous flavour. Or, you could add a little dry white wine. Just remember to not hold back on the garlic! You will end up with a superb Easter lamb roast and with remarkably little effort required.
Lamb Hotpot
If you live in Lancashire, like the Orchard Ovens team, a traditional hotpot could be the lamb dish you take on this Easter. Again, this is not too challenging. You just need to prep the lamb and vegetables as normal, add stock, top with potatoes cut to around half-an-inch in width and pop into the oven covered with foil. At a temperature of around 160 degrees C, this dish will not take that long to cook and you can whip the foil off after about a quarter of an hour and then just brown the top, checking regularly to see how the top is browning. Just use your judgement and take the dish out when ready.
Moroccan Lamb Tagine
Even if you don’t have a tagine dish, you can create the same effect in your wood oven by using a cast iron or earthenware dish. Your tagine dish can be a combination of lamb and spices, such as turmeric, cumin, and even chilli if you like things spicy. Throw in some garlic cloves, ginger and whatever accompaniment you want in your recipe. This might be apricots, or chickpeas perhaps, or maybe pomegranate, or butternut squash. Your oven will cook your tagine dish perfectly and imbue it with amazing smoky flavour. Just rustle up some couscous and you will be on to a winner.
Lamb lasagne
Baking a lasagne in a wood-fired oven is child’s play. Just construct it as you would normally – although you can cook your meat in a skillet pan in the oven first. Layer your lasagne, pop it in the oven and watch it quickly bake with a beautiful crust.
Middle Eastern pizza
If you simply can’t go through Easter without pizza, why not cook a gourmet pizza, topped with lamb, in your Valoriani wood-fired pizza oven? Get some mince lamb cooked up in a skillet pan with chilli, onion and garlic, throw in a few pine nuts and roast some strips of butternut squash on a tray. Spread your usual tomato base on your pizza, put all the ingredients on the top, crumble some feta over the top and away you go. With a minute or so, you will have a fabulous pizza that you can serve up on a plate. Just make sure you’ve got your pizza oven up to the top temperature, which is what pizza requires.
