Turn to the Rotativo to Save Energy and Labour Costs and Achieve Great Margins

Pizzerias and restaurants wishing to optimise both energy and labour usage, and invest in an oven from a manufacturer which always focuses on longevity and top quality solutions, are urged to turn to the Valoriani ‘Rotativo’ pizza oven.

It incorporates the finest gas burner available - a 10-burner Spitfire device - and only requires one burner, rather than two.  It also needs no additional electrical support, cutting energy costs there too.

Its rotating floor facilitates easy and even cooking of pizza, without the need for manual turning.  Each pizza can be set to bake on what is usually the ‘speed one’ option on the rotating control panel.  Once ready, an audible signal alerts the chef, who can have been preparing other food, rather than having to watch over what is cooking.

Furthermore, it has an in-built and patented RHS (recycled heating system), which reclaims heat generated during cooking and blows it back under the oven floor, to help the user save on their energy bills.  This ensures an even and stable temperature for the oven floor.

Thanks to also incorporating the best insulation available in the oven market, it also achieves an energy cost reduction of up to 30%.

Short baking times of 70-90 seconds are achievable and 8 or 9 larger (30/32cm) pizzas can be cooked simultaneously, producing a first-class product.  Both oven and burner have received AVPN accreditation, meeting the exacting standards that the AVPN demands of ‘real Neapolitan pizza’.  This is a huge endorsement, even for a chef happy to produce non-Neapolitan pizza.

The degree of heat recycling can be regulated, according to oven usage.  Different settings can be selected for quieter periods than for times of heavy demand.  It can be ramped up 30-40 minutes ahead of any peak period, to optimise the benefits of this unique energy system.

The oven is also extremely well-constructed.  No cement is used in the creation of the baking floor, which comprises pure minerals, pressed together and furnace-baked for 16 hours, at a temperature of 1300°C.  Both floor and dome are produced in-house by Valoriani artisans – a vital part of the family firm’s quality control process.  The overall construction is made from unique refractory ‘cotto’ clay, which has just the right amount of alumina to produce an optimised firing-up of the oven.

Aesthetically, the restaurant owner has a choice of a contemporary metal-covered oven or the classic dome shape, rendered and coloured as desired or given a hand-applied mosaic finish.

The rotating oven also makes cleaning a very quick and easy process.  Cooking debris on the oven floor falls into a drawer, which can be removed and emptied in seconds.

The burner self-regulates the flame, to keep the temperature within 5 degrees of the pre-set temperature.  Control-setting is easy to do, whether using the rotation and RHS control system, or the gas burner control panel, both situated conveniently at the front of the oven.

The oven can also run as a dual-fuel wood and gas option but the legality of dual fuel usage is dubious in the UK and not recommended by Orchard Ovens, which would urge any buyer to get local, independent advice, if wishing to use that option.
